Carrot Cake or Broccoli Spice Pancakes

These carrot cake pancakes or waffles are the absolutely bomb.  I feed them to the kiddos for dinner and I know they are getting something healthy and delicious that will actually get eaten.

TIP: Never tell your children the true name of these pancakes.  They are simply Mickey Waffles or Chocolate Chip Pancakes or Spice Pancakes.

This recipe is adapted from Foodlets - my favorite foodie parent blog.

ingredients
This is where I amend the Foodlets recipe and make things easy.  I use this pancake mix they sell in the healthy section of Wegmans.  There are still a few weird preservatives in there, but it is quicker than making your own mix.
  • 1 teaspoon pure vanilla extract
  • 1 cup of milk
  • 2 cups finely grated carrots or frozen broccoli.  You literally just throw baby carrots or frozen broccoli into the food processor and voila.
  • 1/4 cup wheat germ - I put wheat germ in everything!  Fiber!
  • 1 teaspoon ground cinnamon or pumpkin pie spice
  • Chocolate Chips, Sprinkles, something fun
  • 3 tablespoons butter, for pan
You can add an egg to the mix if you want to make waffles.


instructions
Stir everything together.  
Heat skillet or griddle to medium, add butter then cook in batches of 4 pancakes. I dropped the batter from a 1/4 cup measuring cup without scooping it out entirely and this worked well.
Store in the oven on warm on aluminum foil until everyone is ready to eat.
Slather with butter and VT Maple Syrup.

Stitch Fix Winners and Losers

I'm being super brave and posting a Stitch Fix post.  I figure sacrificing some selfies could amount to a) better fixes b) more blog traffic and c) opening up some style dialogue! 

If you are not familiar with Stitch Fix and how it works, see below:

1. Start by filling out your style profile - you will complete a variety of questions on sizing, pricing, preferences, colors, etc. You can also write notes about likes/dislikes. Make sure to link your fashion board on Pinterest so your stylist can see what you like! 

2. Order your first fix! Your card will be charged a $20 styling fee, but if you keep any item you will be credited back the $20. You will receive 5 items [made up of clothing, jewelry, and handbags]. You can tell your stylist if you only want clothes!

3. Decide what you want and what you want to send back [they provide a postage paid envelope]! You have 3 business days to decide - use this time to try everything on, see what you have in your closet that pairs well with it and don't be afraid to yes to something that you wouldn't normally. That's what makes Stitch Fix so fun!  My personal philosophy is only keep it if you love it!

Oh, and if you keep all 5 items, you get a huge 25% off discount the total.  

You can decide how frequently  you want to receive fixes.  I usually get one every 1-2 months depending on budget constraints!  I've been a subscriber since October, and I've received 10 fixes.  I tried to include the name and pricing for the items I kept.

This is one of the most flattering and easy to wear dresses ever.

Ok, let's start with the jeans.  I'm fairly certain they were mislabeled on my receipt because these jeans are totally skinny.  There is nothing boyfriend about them.  The brand on the back is "Mia&Moss."  I have never in my life ever paid this much for jeans.  But I've worn these about 50 times since last fall.  I absolutely love them.  They are stretchy and perfect for a longer top like this one.  They've worn and washed really well, look great with boots or flats.  The top is amazing.  I want it in every color.  It's very flattering (see that strategic ruching around the mid-section?)  It also feels like I am wearing pajamas.

I wore this all fall/winter long.  I basically told my stylist.  Send me things that are as comfortable as pajamas, but are socially acceptable to wear to the grocery store.  She listened.

This one is so crazy, and I cannot even believe I kept it!  That being said, I have worn it to the two fancier date nights I had this year, and I felt like a million bucks in it if not a little odd.  But hey, sometimes it's nice to step outside of your comfort zone.  What drew me to this dress was the fact that it was a sweatshirt on the top, but a party on the bottom.

Baked Eggs

I know baked eggs are a thing - a potentially fancy thing according to the school of Food Network.

I came up with this go-to lunch that I call baked eggs, but is super unbelievably easy.

Step 1: Pam ramekin or any other pan that is clean

Step 2: Put any kind of chopped up veggies you have on the bottom.  Season with salt and pepper.

Step 3: Crack an egg on top, add a splash of milk or half and half.

Step 4: Bake at 400 until little people have stopped asking you for things (usually 20 min or so), then add some cheese.

Step 5: By the time you actually get back to your plate after breaking up a fight or two, the cheese should be melted.  Enjoy with some toasty bread for dipping.

Bridget's First Sunshine Birthday Party

This was the first birthday party I ever planned, and I loved every second of it.  One year olds could care less that they are having a birthday, so I planned the party I wanted.  A vintage "You Are My Sunshine" party it is!  Almost four years later, and this party is just so pretty and feminine.  Love love love.

These pinwheels were so a first time parent thing to do.  How not childproof are paper pinwheels with a push pin supporting them in the center? Oh well.  Aren't they pretty.  Buy your own here.
